Stuffed Pita with Tzatziki

Cheers to a meat-free Monday meal that's as simple as it is satisfying! Try stuffing a pita pocket with our juicy Lemon & Herb Chicken-Style Strips and drizzle with tzatziki. 🥙
Ingredients
- 1 packet Plantry Chicken-Style Lemon and Herb Strips
- 2 Pita breads
- Cherry tomatoes, sliced
- 1/2 avocado, sliced
- Lettuce
Tzatziki
- 1/2 cup coconut yoghurt
- 1/2 cucumber grated, excess water drained
- 1 tsp minced garlic
- 1/2 tsp dried dill
- 1 tbsp lemon juice
- 1 tsp olive oil
Method
- To make the tzatziki, in a small bowl mix together the cucumber, garlic, dill, lemon juice and olive oil.
- Cook the Plantry Chicken-Style Lemon and Herb Strips as per pack instructions.
- To assemble the pita, cut the pita bread in half and toast until warmed through. Fill the pita bread with the cooked Chicken-Style Strips, tomato, cucumber, lettuce and drizzle with the tzatziki sauce.
