Vegan Chicken Caesar Salad

Throwing together a Caesar salad is pretty easy, chuck in our Chicken-Style Strips for a bit of protein and you've got yourself a Meat-Free Monday masterpiece.
Ingredients
- 150g Plantry Chicken Style Strips
- 1 baby gem cos lettuce, chopped
- 1/2 Gourmet Vegan Bun
- 2 tbsp vegan parmesan cheese
- Salt and pepper, to taste
- Tomatoes or vegan bacon bits (optional, to top)
Vegan Caesar Dressing
- 1 tsp dijon mustard
- 1 tbsp nutritional yeast
- 2 tbsp Praise Vegan Mayonnaise
- 1/2 tsp crushed garlic
- 1 tsp capers
- 1 tbsp lemon juice
- 1 tsp maple syrup
- 1 tsp extra virgin olive oil
- 1 tsp white wine vinegar
Method
- Combine all the Caesar dressing ingredients in a blender and blend until smooth, scrape down sides as needed. Adjust seasoning to your liking. Chill in refrigerator.
- Cook Plantry Chicken Style Strips per pack instructions.
- Dice the Gourmet Vegan Bun into crouton size pieces. Bake for 10-15 mins or until crisp and golden.
- In a bowl, combine the chopped cos lettuce, Caesar dressing and a sprinkle of vegan parmesan cheese. Toss ingredients until lettuce is fully coated.
- Top with vegan parmesan cheese, cooked Plantry Chicken Style Strips, optional tomatoes or bacon bits and a sprinkle of salt and cracked pepper.
